Lemon Bars



Personally I dont love these, but Esther and Daniel and my dad do
What can i say, I'm not a lemon person.
These are a pretty good treat thou.

What you need:
Crust:
1 soft stick of butter
1 cup of flour
1/4 cup powdered sugar
1 tablespoon cornstarch or corn meal cuz i accidentally used it when i took the pics.
pinch of salt

Filling:
2 eggs
1 cup sugar
1/2 a cup lemon juice (Fresh of bottled works), or you can use more if you like way lemoney
2 tablespoons milk
2 tablespoons flour
2 teaspoons lemon zest. Thats the gratings of the outside of a lemon.
OPTIONAL: 1/2 teaspoon vanilla extract and 1/2 teaspoon lemon extract. I like it with he vanilla and not the lemon, but none or both works.



What you need to do:

1) Make the crust: just mix up all the ingredients in a bowl by hand or with a spoon, till it makes a cough thats like sand.


2) line an 8x8 pyrex with tinfoil. so that you can like pull the bars out through the tinfoil at the end.

3) Put the crust into the tin and push it down. Make some fork marks in the dough so it doesnt bubble.

4) Make the dough for like 15 minutes on 350. NOT till its brown, till its just like a little bit cookesd.




5) While its baking, make the filling. In a bowl, mix the eggs, sugar, lemon juice (sometimes I add a little at a time to make sure it tastes right), milk, vanilla or lemon extract, and whisk it all together until its like really bubble and mixed. 


6) Add the flour and whisk it again, until its not lumpy. 


7) Add the lemon zest and guess what you do!! Whisk.

 


8)Pour the lemon stuff over the half baked and crust and bake it again for like 15 or 20 minutes. You wanna bake it until its like set on top, and no so jiggly. It can jiggle a little but you dont want it to be like liquid. The top shouldnt be brown but like a little darker yellow.

9) Let the bars cool and cover the pan and put it in the fridge for like 3 hours AT LEAST. Whenever something liquid like this is baked it really needs to be able to set in the fridge, or else it won't get soft and yummy and smooth.

10) slice the bars and DUST with powdered sugar. I always put too much and everyone breathes it in and chokes. Its kinds funny but you dont wanna kill your friends and family.
