Potatoe Gnocchi (yeah I spell it with an "e" at the end)

What You Need:
1 large potatoe or 2 small potatoes
1 beated egg
1/2-3/4 of a cup (this depends on how sticky the dough is)

What you need to do:

1) microwave the potatoe for 7-8 minutes on a microwave safe plate (I use paper)

2) Let it cool for 5-10 minutes, till it's a little cold. You dont want the potatoe to scramble the egg.

3) Peel the potatoe and break it up into like 4 small pieces. Put it in a strainer over a small bowl.

4) With a wooden spoon, push the potatoe through the strainer, into the bowl. You want to break the pieces up realllly good.

5) Put a sprinkle of salt into the potatoe, then add an egg. Mix it gently with a fork.

6) Add 1/2 a cup of flour, and continue mixing with a fork. You want to mix it till it becomes like a dough. You can add more flour if its not sticking, but dont put too much, or else it will be too flakey.

7) Put a small pot of water to boil.

8) Take your ball of dough and break it into two. Dust your counter with flour and roll each part out with your hands, into about half an inch thick pieces.

9)  Cut the pieces into small bite sized pieces.

(look margaret is cutting!!)

10) Once the water is boiled, turn the heat down and throw the gnocchi pieces in. They'll stick to anything you put them on so if your transferring them from the counter to the pot in a plate, use some flour.

11) After about 30 seconds the gnocchi will start to float. let it float for 15 seconds, then take it out.

DONE!!

Now for the sauce:

I like a nice spicy tomatoe sauce, so thats what I always make.

1) in a frying pan, put some olive oil to get hot. Add in some fresh chopped garlic, or some frozen garlic like I use.

2) Once its hot, lower the fire and add in a can of tomatoe sauce. Mix it up, and add spice and herbs. I use red pepper flakes, oregeno, basil, cayenne pepper, salt, black pepper, garlic powder and cinnamon. Just a few shakes of each, and you can taste it to add whatever else you need.

3) For spice, I add in Sriracha chili sauce. Its amazing. If you dont know it, and dont use it, START. I also add parmesean cheese to the sauce, but some people dont like that.

4) Stur that all up, and let it simmer. When the gnocchi is done throw it straight into the sauce, and serve it hot. YUM

Here's Esther and Margaret eating their gnocchi

& Daniel eating a later batch that I'm gonna take for lunch
