Chicken soup

The only thing better then chicken soup when your sick is chicken soup in this godforsaken weather.

Today after work I made a quick pot of soup, and came home to it after school. It was the bomb.

Regular people make chicken soup as a side dish, or like an appetizer, but I like to make it as its own meal, with like pita bread or rice. What you do with it is up to you.

No matter what, it needs salt.



What you need: 

1 Chicken
1 chicken bouillion cube (http://en.wikipedia.org/wiki/Bouillon_cube)
2-3 large potatoes, or 3-5 small or medium ones
6-7 carrots
7-8 stalks of celery
1 large onion, or 2 small ones (I only had small)
Salt
Pepper


What you need to do:

1) Fill a large a little more then half way with water, and put in the chicken. Get the water to a boil then lower your fire. Once the water is boiled, add the bouillion cube, and a few sprinkles of salt and pepper.



2) Cut the top and bottom off of your onion and peel it. Cut a slit in it, about a quarter of the way though, and throw it into the pot.


3) Put the fire to low, cover the pot, and let it boil for about an hour. 

4) Meanwhile, grab your veggies. Peel and wash the carrots, celery, and potatoes. How much you use of each is subhective, based on what you like in the soup. Personally I like alot of potatoes so I used alot, but i also had to add carrots and celery to compensate for my overuse of potatoes. Its a balance, but if your not sure just stick to the numbers I gave up top.



5) Cut the ends off the celery and carrots, and chop everything into big ish pieces. You dont want it too small cuz then it will all fall apart when its boiling. So chunks.

6) After the chicken has boiled for about an hour, add the veggies, and more salt.

7) Cover the pot and let it cook (still on a low fire) for about 1 and a half to two hours. Keep adding salt

8)The chicken is going to get very soft, so when after an hour and a half, try and pull it apart. If its coming off the bone, its ready. You can boil it for longer, but its good to eat then. ( I usually boil for 3 hours total)

9) Take the chicken out of the pot and put it on a plate, let it cook for a little while because its VERY hot.

10)  Clean the chicken, and put the meat separate from the bones and fat and skin. This parts a little gross

11) Put the cleaned pieces of chicken back into the soup, and thats it! its ready.



12) Since it was only for me I didn't make a pot of rice, instead I used a thing of minute-rice, that stuff that microwaves. YUMMY
