Oatmeal Chocolate Chip Cookies

Cuz who likes raisins



What you need: 

1 cup (2 sticks) butter
1 cup light brown sugar
1 cup sugar
2 eggs
2 teaspoons vanilla

1 and 1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

2 cups old fashioned oats (Quaker I guess)
1 and 1/2 cup chocolate chips

What you need to do:

1) Melt the butter then let it cool, and mix it with the sugars till its light and fluffy (by hand OR with a mixer. I like it better by hand).



2) Beat the eggs in one at a time with like a whisk or a spoon, and then do the same with the vanilla.


3) Mix the flour, baking powder, and salt, and then put it into the bowl. 


4) Once its all mixed, add the oats and chocolate chips. Theoretically you could add whatever else you want at this step, but I didn't really have anything else in my house.



5) Throw em on a greased tray, but like far apart. No more then 12 on a tray. Bake them for like 15 minutes, till the middle is still pale but the sides are cooked. 







Chocolate Chip Cookies

These cookies are especially delicious to me cuz the recipe is my own.
Also cuz there delicious.
Everyone needs a perfect chocolate chip cookie recipe, and this is mine. Could be yours too, thats your choice.
The dough is also really good to freeze and put in like ice cream, or on cake or something.
I do it without a mixer bc I like it better like that, and its not hard. You can use a mixer if you want thou.


What you need: 

12 tablespoons butter (a stick and a half)
1 cup of dark brown sugar
1/2 a cup of sugar
1 egg plus 1 yolk
2 tablespoons vanilla
2 cups and 2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
like a cup of chocolate chips, its always different. 

( I put baking powder in this pic but OOPS its really baking soda) 

What you need to do: 

1) Melt the butter and wait for it to cool. Mix it with the two sugars till there aren't any lumps.




2) Add the egg, the yolk, and the vanilla, and mix it really well till its all combined. 


3) Mix the flour, baking soda and salt in like a measuring cup, and add it to the bowl. 



4) Mix it all together till its really combined.

5) Add the chocolate chips and mix it till you cant see any more flour. 




6) Bake them on a greased pan for like 10 minutes. Take them out when there still really soft bc they bake more out of the oven. Just bake till they are golden brown and delicious.

Slutty Brownies

there quick, there easy, and there fabulous.
no further explanation required.


What you need
1 batch cookie dough
1 batch brownie batter
1 pack oreos

For the Brownies:
10 tablespoons butter
1 1/4 cup sugar
3/4 cup cocoa powder( I actually used like half a cup cuz I didnt want it so chocolaty
1/2 teaspoon salt
2 tablespoons vanilla
2 eggs
1/2 cup flour


For the Cookies:
1/2 cup (1 stick) butter
1/2 cup brown sugar (packed tight)
1/2 cup sugar
1 egg
1 1/2 teaspoon vanilla
1 1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chocolate chips (Or more based on prefrance)




What you need to do:

1) make the brownies: 
I apologize for the lack of pictures, my phone died.

a)melt the butter in a small saucepan on the stove on high heat.

b) Add in the sugar and cocoa powder and whisk it to really mix it well

c) turn off the stove and add in salt, vanilla, and eggs. Keep whisking it till the eggs are like really beated into it.

d) Add the flour and keep mixing till its all one nice yummy chocolety batter. 

2)Leave the brownie batter on the side, and make your cookie dough.

a) With a mixer, mix together the butter and brown sugar and sugar (cream it together). Really try and get out all the brown sugar lumps.

b) Add the eggs and vanilla and mix together.

c) add flour, salt, baking powder, and baking soda, and just keep mixing (You can start to use a spoon if your using a handheld mixer)


d) Throw in your choco chips, and done.



3) Now, to assemble your little sluts. heat your oven to 350. Grab a 9X9, or like 12X6 like i used, and line it wih foil, and spray the foil with pam.

4) Spread your cookie dough on the tinfoil.


5) now again i apologize for no pictures. Put a layer of oreos on the cookie dough. Not overlapping, just 1 layer

6) Cover that all with your brownie layer, making sure it overs eveyrhing.

7) Bake for 30 minutes. Test the MIDDLE of the brownie after 30 minutes, if its not ready then bake for like 5 more mins till a toothpic in the MIDDLE of the brownie comes out clean.

8) the best way to eat these is after theyve cooled for like 2 hours, but truth I can never resist.

The best damn cheesecake ever

CHEEEEEESECAKE!
Thats what goes through my mind whenever I have the pleasure of being about to eat cheesecake.
Its my favorite.
Also, I love oreos and caramel.
So yeah, this was a bit too much for me to handle.
Really not any extra work then a regular cheesecake, cleanup was a bit annoying.
Make it for you, make it for a friend, take the entire thing to bed and polish it off in 10 minutes, no one will judge you.



What You Need:

Crust and topping:

20ish oreos 
Half a stick (4 tablespoons) butter (melted)
2 bags of caramel candies (werthers SOFT caramels)
a splash of milk (lol)
a pinch of salt (lol) 
1/4 cup melted semi sweet chocolate chips

Cheesecake:

3 8 ounce packages of cream cheese
3/4 cup sugar
1 tablespoon vanilla
3 eggs



What You Need To Do:

1) Put the oreos in a ziploc bag and crush em till there crumbs. Rolling pin usually gets the job done here.




2) In a small bowl mix the crumbs and the melted butter so it sticks together




3) Push the oreo crumbs onto the bottom of a spring form pan, making sure its even and covers the entire bottom. Useeee ya hands. Springform pan is the one where the side comes off, it like unhooks and you can slip it off of the bottom. (http://en.wikipedia.org/wiki/Springform_pan)



4) Make your caramel. Put about 25 caramels, a splash of milk and a little bit of salt in a bowl. This is gonna come out to about half a cup of caramel. Microwave it for a minute at a time, sturring after each minute, until its yummy and smooth like caramel. Usually it takes 2 minutes. 


5)Pour the caramel on the oreo crust, and spread it out with a spatula. Put this in the fridge while you make the rest of the cake.







6) Now make the cheesecake!!! Put the cream cheese, vanilla, and sugar in a bowl, and mix till they combine


7) Add your eggs one at a time, mixing in between. Mix it all up for about 5 minutes, till there are really no lumps. You want it majorly smooth.


8) Pour the cheesecake onto the crust (HERES MY ENGAGED FRIEND ESTHER DOING THAT STEP CUZ SHES A SHATRA TO BE!)


9) Bake this on 325 for 65-75 minutes. I bake it on a tray with tinfoil just so the caramel doesnt drip onto my oven. Yup a whole hour and change. Once you can put a toothpick in and come out clean, your ready.



10) Let it cool for like 10 minutes, then just kinds run a knfe along the edges of the cake to detach it from the pan. Let it cool for another half an hour, then take the springform off.




11) You should really leave if for 1-3 hours in the fridge, but I dont find that step so necessary. Refrigerate for a little while, like half an hour, then top!! 

12) Make caramel the same way you did before, this tome with only 10 caramels, less milk and less salt. Microave for 1 minute 30 seconds, stirring once in the middle. Microwave 1/4 of a cup of chocolate for  alittle more then 2 minutes, till thats smooth like the caramel.


13) Top the cake with caramel!! I love caramel so i put alot (guilty emoji). Doesnt need to look so clean, I think it looks kinda cool when its a mess.

14) Put the chocolate on top of that, and voila, done.


ITS SO GOOD.

DIY Twix

This little gem is the instagram that kickstarted my cooking!
Being me, I get like 30 likes max. Posting Twix got me like 80, and so it began. 
So, love it or hate it (its still an obsession) here they are.

This is actually a really cool thing to make.
And if u go to Brooklyn college and love Twix like me, you know the only place to get them is the vending machine in the basement of Boyln and thats a hassle. So bring your own! Take it as a gift. whatever. yum!




What You Need: 
For the cookie part: 
2 sticks of butter ( 1 cup) (room temp)
3/4 cup confection (powdered) sugar
1 egg
1 teaspoon vanilla
2 1/4 cup flour
1/2 teaspoon salt 
For the Caramel part: 
about 55 Werthers soft caramel candies
2 tablespoons milk
1/2 teaspoon salt
For the chocolate: 
A big bag of milk chocolate morsels

1) mix the confectioners sugar or whatever its called with the butter, till its nice and fluffy. 

2) Throw the egg in and beat it till its nice and combined


3) next goes the vanilla, more beating 


4) last but not least, flour and salt. mix it up till it forms a dough, like a sugarcookie dough (its shortbread). Put the dough in the fridge to get a little hard, like 10 minutes. 


5) Preheasd your oven to 300, with the rack in the MIDDLE. Cover a tray with parchment paper or tinfoil (doesnt need to be sprayed), and spread the dough out onto it. The width is bit tough to get, it should be like a little less then a quarter of an inch. 




6) Bake it for 30 minutes, rotating it in the oven after 15 minutes (put the back in the front and the front in the back. let it cook for like 10-15 minutes. 



7) While its baking, unwrap all the caramels, and add the 2 tablespoons milk and dash of salt to them in a bowl.





8) microwave the caramels for a minute at a time, mixing after each minute. 



9) Nuke em for like 2 minutes 30 seconds, till there retartdly yummy and caramelly <3333
Keep mixing it


10) After the shortbread has cooled for like 10 minutes pour the caramel on- cover all the cookie!!


11) This is the worst part- let it cool on the counter for another 10 minutes, then take the tinfoil (without the tray) and put it in the freezer to harder, about 40 minutes. 

12) Once its cooled, cut it into pieces, with a sharp knife. Whatever size you like is good.









13) Let it cool in the freezer, cut, for like another 20 mins, and then take it out.

14) Make a double boiler on your stove- put a medium saucepan with some water, and put a bowl on top of it - dont let the water touch the bowl.


15) Put the chocolote chips in and get the water to a boil, then bring the heat down.
16) The chocolate chips will start to melt. Stir them until they get melted and yummy




17) Put the Twix, one by one, and cover it in chocolate. 

18) Dip each one, and use whatever utensil you have that is like a fork- it needs to have slits. Take the Twix out (again, one by one), let the chocolate drip off, take off the excess, and put the twix on the side on tinfoil.



19) let them cool, and enjoy!!
