Nugget Carrot Cupcakes




My dad decided to get me a camera this week and so naturally i decided i needed to start cooking as much as possible.
Usually I love portraiture but no ones around to photograph, so I grabbed a bunch of recipes and got to work. 
I guess the politically correct term for these would be "mini" cupcakes but nugget just sounds so much cuter!! 
Like the guy in game of thrones. Hes a nugget.


What you need:

1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1- 11/2 cups of FINELY grated carrots (About 6 carrots) (I only used 1 cup cuz i didnt want so many carrot pieces in my cupcakes)
1 cup sugar
3/4 cup veggie oil (Canola oil, corn oil, whatever)
2 eggs
1/4 cup buttermilk (ill get to that later)
1/2 teaspoon vanilla extract

For the frosting: 
12 ounces of cream cheese
6 tablespoons butter
1/2 teaspoon vanilla
1 cup powdered sugar


What you need to do:

1) throw the flour into a bowl.

2) add the baking powder

3) add the baking soda


4) salt


5) and cinnamon


6) and wisk it all up!




7) set it aside



8)  Grating carrots is  a HASSSSSLE but it needs to be done. Cut and peel  like 6 carrots, and then grate them up really small. I used one of these things. 


9) Grab another bowl. Throw in the grated carrots.

10) then the sugar. One whole cup!




11) the oil goes in next 


12) then the eggs. Dont be like me and crack them straight into the bowl cuz thats dumb (Im dumb)


13) Now the buttermilk. You can eithet buy it at a store, or make your own. To make, put 1 tablespoon white vinegar or lemon juice into a measuring cup. Pour milk in till the 1 cup line. Let it sit for 5-10 minutes, and voilà buttermilk.



14) last but not least the vanilla extract.


15) now whisk this mixture together until its one delicious carroty thing



 16) remember the flour you mixed with other stuff? Get that and pour it into the carrot stuff.



Plop.

17) And then fold the flour into the carrot. Just keep bringing the bottom stuff to the top with a spatula. Until its all combines

 



Ew that doesnt look good. Smells and tastes phenomonal thou (DONT EAT THE DOUGH WITH YOUR HOUSEKEEPER LIKE I DID!) 


18) Grease a mini or regular size cupcake pan and heat your oven to 350 (shocker)




19) Fill the pan 3/4 of the way up in each hole with a spoon 

20) and bake them. The mini ones for 13-15 minutes, and the bigger ones for 20-25. DO the toothpick test to see if there ready. 



21) Let them cool


22) Make the frosting: Put the vanilla, cream cheese, and butter into the bowl of a mixer.


mix it on medium high 






till its fluffy


23) Then gradually add the powdered sugar



 24) mix for like 2 more minutes till its all combined.







25 ) frost your cupcakes!!
