He never made me it.
Finally I asked Ouri to order me Vanilla Beans and I got to it
What you need:
1 cup sugar (Split into 2 halves)
1 QUART heavy cream
6 egg whites
1 Vanilla bean (with the pulp scraped out)
You dont need the flowers or the computer.
Well if your following this recipe you probably need the computer
What you need to do:
1) Put your cream in a saucepan on the stove, and cut the vanilla bean in half. Scrape the inside of the vanilla bean into the cream, and boil it on medium. When its about to boil turn the heat off, cover it, and let it sit for 15 minutes
2) meanwhile, seperate the whites from the yolks of your eggs
3) Add HALF A CUP of sugar and the egg yolks and wisk until its like a light yellow
4) After the cream cools, add it to the egg and sugar mixture SLOWLY. Like pour it in very slow, or in batches. Make sure you CONSTANTLY stur it or else the cream will cook the eggs.
5) Ladel the liquid into 6 (I used 3-8 ounce and 4-6 ounce ones) Ramkins
6) Put the filled ramkins into a baking pan or tray or like anything oven safe. Fill the baking pan with hot water halfway up the ramkins.
7) Pre heat the oven to 325 and put the creme brule in. Bake for 40-45 minutes, until you can like shake it and its trembling but its "set". I dont know how to explain it better, if it looks like a pudding its ready. It shouldnt take more then 45 mimutes.
8) Take it out of the water and put it FLAT (so like not on a plate, on a tray or something) in the fridge. Refrigerate for 2 hours so it can really cool. Creme Brule is a cole pudding, so dont try and eat it hot!!
9) Divide the other half a cup of sugar (or sugar in the raw), and use a blow torch ( I know it sound weird but a lot of houses have them, I got a mini one from home depot for 10 dollars cuz we lost the old one) to burn the sugar. Make it like an even layer, then put the blow torch on the sugar until it browns!! Only burn it like right before your gonna eat it thou
