Black Bean Burger Burritooooooooo

Try saying that five times fast.

Of course I decide to make an alternative to a hamburger and end up frying it.
Its good, kinda hard to fry cuz it like falls apart but since it becomes a burrito it can be in pieces!!
Win win!!

Ps. its parve until you add cheese to it at the end


What you need: 

Like 1 Shitake mushroom
1 can of black beans
1 spoonful of chopped garlic (like 2-3 cloves)
3/4 cup of bread crumbs( I made from a hamburger bun)
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
2 tablespoons parsley
1 tablespoon soy sauce 
salt 
pepper 
Oil for frying

Flur tortillas
cheese
sour cream
avacado
whatever other fixings you like!



What you need to do:

1) Make your breadcrumbs! Throw half a hamburger bun into a food processor  and chop it until its crumbs! (you can also use oats, or regular breadcrumbs)


2) Chop up the mushrooms and put it in the food processor. Add the beans, garlic, bread crumbs, paprika, chili powder, cumin, and soy sauce. Sprinkle salt and pepper to taste, and mix it for like 30 seconds. NOT so much, just so its like combined.








If it needs to be thicker, add more bread crumbs, or if it needs to be thinner add some water. Just till its like a nice puree that you can make into a burger. 


3) Stir in the parsley and let it sit for like 10 minutes. The more it sits the better it will stick together.


4) Shape the burgers into these gross looking shapes, and let em sit for another 5 minutes while the oil gets hot.



5) Heat oil on a frying pan and cook the burgers, about 5 minutes on each side. Cook each side till its crispy, but before it burns. 



6) Put the tortilla in the leftover oil, for a few seconds on each side (It'll help it not rip when you make the actual burrito)



7) Make yourself a burrito with all the fixings!! Spread sour cream, add cheese, taco sauce, avocado  lettuce, whatever. Roll it into a cute shape and dig in.












Oatmeal Chocolate Chip Cookies

Cuz who likes raisins



What you need: 

1 cup (2 sticks) butter
1 cup light brown sugar
1 cup sugar
2 eggs
2 teaspoons vanilla

1 and 1/2 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

2 cups old fashioned oats (Quaker I guess)
1 and 1/2 cup chocolate chips

What you need to do:

1) Melt the butter then let it cool, and mix it with the sugars till its light and fluffy (by hand OR with a mixer. I like it better by hand).



2) Beat the eggs in one at a time with like a whisk or a spoon, and then do the same with the vanilla.


3) Mix the flour, baking powder, and salt, and then put it into the bowl. 


4) Once its all mixed, add the oats and chocolate chips. Theoretically you could add whatever else you want at this step, but I didn't really have anything else in my house.



5) Throw em on a greased tray, but like far apart. No more then 12 on a tray. Bake them for like 15 minutes, till the middle is still pale but the sides are cooked. 







Chocolate Chip Cookies

These cookies are especially delicious to me cuz the recipe is my own.
Also cuz there delicious.
Everyone needs a perfect chocolate chip cookie recipe, and this is mine. Could be yours too, thats your choice.
The dough is also really good to freeze and put in like ice cream, or on cake or something.
I do it without a mixer bc I like it better like that, and its not hard. You can use a mixer if you want thou.


What you need: 

12 tablespoons butter (a stick and a half)
1 cup of dark brown sugar
1/2 a cup of sugar
1 egg plus 1 yolk
2 tablespoons vanilla
2 cups and 2 tablespoons flour
1/2 teaspoon baking soda
1/2 teaspoon salt
like a cup of chocolate chips, its always different. 

( I put baking powder in this pic but OOPS its really baking soda) 

What you need to do: 

1) Melt the butter and wait for it to cool. Mix it with the two sugars till there aren't any lumps.




2) Add the egg, the yolk, and the vanilla, and mix it really well till its all combined. 


3) Mix the flour, baking soda and salt in like a measuring cup, and add it to the bowl. 



4) Mix it all together till its really combined.

5) Add the chocolate chips and mix it till you cant see any more flour. 




6) Bake them on a greased pan for like 10 minutes. Take them out when there still really soft bc they bake more out of the oven. Just bake till they are golden brown and delicious. 






Biscuitey type Pastries. Lets just call them Biscuits

You guys I've been the worst blogger ever these past few months.
No excuses, but here I am back on the saddle!

This past Friday my dad took me for brunch, and I ordered a biscuit. It. Was. Delicious!!!!
So so good, its all I could think about.

Today I was thinking about it, so I made my own Biscuit. Its not a traditional biscuit, more like a cross between a biscuit and a cookie.
Whatever, its good.
Make it,  enjoy it, start ordering biscuits at brunch.

What you need: 

3 cups flour
2/3 cups sugar
5 teaspoons baking powder
1/4 teaspoon salt
2 sticks (1 cup) butter
1 and 1/4 cup heavy cream

Optional for glaze:
5 cups powdered sugar
1/2 cup milk
1 teaspoon vanilla
Lil bit of salt 






What you need to do: 


1) Put the flour, sugar, and baking powder into a colander (sifter) and sift it into a bowl.





2) Cut the butter into small pieces and put it into the bowl




3) Use your fingers to like mash the butter into the flour. Like you would for a pie crust. Cut the butter into the flour till the dough is like a course crumby dough. Just squeeze each piece of butter with your fingers and it will break apart. Make sure the butter is cold so it doesn't melt in your hands. 




4) Pour the heavy cream into the crumby dough, and mix it up with a fork till it like just comes together.



5) Make the dough into a ball and put it onto a FLOURED counter. Its sticky, so use flour. 



6) Flour a rolling pin and roll the ball out to like half an inch thick. Its gonna rise a little but not so much. 


7) Cut circles out with a cookie cutter, or anything with a small round opening. I used a wine glass. 


8) Heat the oven to 350, and put the biscuits on a greased tray. 



9) Bake them for like 15 minutes, but make sure you watch them because it can be shorter or longer. When there just turning golden brown is when they are perfecccct.







Glaze: 

I glazed half of mine, and left the rest to be eaten with butter and jelly cuz YUM.

1) Sift the powdered sugar and salt like you did with the flour.
2) add the milk and vanilla and whisk it up. (I only used half the amount of powdered sugar this time, usually I'd use 5 cups.)


3) When the biscuits are cool, dip them one by one into the glaze.


4) And put them on a cooling rack to drip.
